That's the same route I took in 2017 at the age of 69. I'm sure you'll enjoy it.

Thank you. Yes, we will do. We’ll certainly have time to do updates cos we’re planning on taking it reeeeal easy, take time out to enjoy it and to wish “buen camino” to all those who will no doubt overtake us. 😂
I love it because that is my plan as well. I am not retired yet but I am 63. Some days will be less than 10 km but of course I have 5 weeks to complete the walk from Porto to Santiago de Compostela.
 
Walked from Porto and then inland at Vila do Conde in 2017. Planned to split the long stretch - Barcelos to Peunte da Lima at Casa da Fernando (no booking). It was raining and the casa was full. Fernando rang ahead trying to secure a bed but nothing. Ended up sharing a taxi to Peunte da Lima. Looks like booking ahead is now the norm 🥴. Enjoyed the walk. Only real uphill is after Peunte da Lima. Have done the Norte since in 2019 and I was born in ‘45.
Missed the Espiritual. It sounds amazing. Tend to just get up and walk with some idea of where I’ll stay. Tui was great for a day off.

Obviously, each place has a limited number of beds. If there's somewhere special that you want to stay, like Fernanda's then yes, you should make a reservation.
However if you are happy to accept any bed available it's still possible to wing it.

Fortunately, they can also be found north of Porto. I'm starting my next Camino in Lisbon to maximize the number of days that I will be able to eat pasteis de nata. 😋

I have a Portuguese colleague at work and she makes them every day for a local bakery and brings in what she considers her "seconds", or rejects and the staff just love it.
 
Get a spanish phone number with Airalo. eSim, so no physical SIM card. Easy to use app to add more funds if needed.
