I'm not aware of a website that shows the number of pilgrims at each stage of the Camino Frances. Maybe an app? but it would be very difficult to have such reports.
Surely someone here in the forum can give you more information.
Occasionally I connect to the website https://oficinadelperegrino.com/ to read any news. Today, on the home page it is written: yesterday 668 pilgrims arrived.

The first edition came out in 2003 and has become the go-to-guide for many pilgrims over the years. It is shipping with a Pilgrim Passport (Credential) from the cathedral in Santiago de Compostela.
