Scott Borger has created a very nice spreadsheet called Pack Analyzer. Here is what it can do (copied from his site):
Pack Analyzer (currently v2.0) is an Excel application that streamlines your packing list for all of your adventures. Once you’ve entered all of your gear and their respective weights, let Pack Analyzer help you decide what to pack and what to leave behind. Gone are the days of forgetting to pack critical gear. Gone are the days of not knowing how much your pack will weigh until you throw it on your back. I originally created this spreadsheet for my own use. After realizing how much time it saved me, I decided to make it available to the public/climbing community.

A friend pointed this out to me and I wish I had this when I was planning my Camino! The spreadsheet is easy to use, has fairly clear instructions, and come in versions specific to mac and windows.
