I don't thik you can do a post restante from France to Spain. You might find that the first Post Office (Correos) where you could do this would be in Villava or Burlada between Larrasoana and Pamplona.
Most Post Offices are open from 8h30 – 20h30 on working days and 09h30 – 14h00 on Saturdays. Parcels sent ahead take 3 – 5 working days.

I think Sil is right about the fact that it is not possible to send a package "poste restante" from abroad. Initially I thought it was possible, but after some research I found this page on the correos website and if I read it correctly this is not possible.

If you want to walk from St Jean but have luggage to send ahead to Santiago, there are people who will carry your baggage for you between stages. Perhaps you could post your stuff in Pamplona?
