Portomarin for sure and there are lots of little streams and rivers that you walk along/across that could be tempting in warm weather-if the water level keeps high enough. It depends on how much depth you require but wallowing can be very refreshing!
If you decide to go on to Fisterra then the little river you cross between Olviroa and Hospital has some nice deep pools and once on the coast beaches are lovely between Cee and Fisterra.

I have just finished walking from Astorga to Santiago.
I saw people swimming in Molinaseca (young people diving from the road bridge above the river), Vega de Valcarce and Cacabelos. Beautiful weather.

And the albergue at Boadilla del Camino has a swimmingpool.
Can't tell how deep, I walked in october / november; the pool is outside without heating, so the whole thing was covered.

In Molinaseca, even in summer, water is absolutely cold!!
