Booking.Com will give you a good selection. It is what I used for the days not staying at a municipal.

You may also be able to stay in the Monastery in Armenteira, they have a website with contact information.

Depends on the dates. I believe July /August they do not accept 1 night pilgrims.

That may well be correct, we have one night booked, but it is in October. The correspondence is in Spanish and you must abide by monastery rules ( in by 9 pm), but it sounds lovely.
