Sevilla to Salamanca in 12 days walking this autumn.

We are both good walkers but it is obvious that we will be unable to walk all of the stages in the time period that we have. Any suggestions as to which stages we should miss out and how to do so?

I think the question is Why did you choose Sevilla to Salamanca (and not any other stretch)? Surely, you'll have your reasons and they might provide tips about what you may like to miss in between... That's assuming you want to miss something as you suggest with your question(s) because, maybe, you could think once again if you wouldn't prefer to walk a shortern stretch withtout missing anything in between.

IMHO, your preferences, aim, interests and some other personal factors are the key to decide what route and/or stages to walk.

Because of time (and weather) factor, we knew we couldn't walk from Sevilla....so started from Mérida instead.
I would look at the time you have and start where appropriate if you want to finish in Santiago.
The other option is to start from Sevilla and walk as far as you can...and finish (or not) another time.

Are you planning to go all the way from Seville to Salamanca in twelve days? That would be a lot of walking. While I was on VdlP in 2015 I met a group of English guys who did a two weeks of the VdlP each year. I thought this a great approach.

Consider starting in Merida. It's about 280km to Salamanca which is a fairly relaxed 12 days perhaps allowing some time to visit Caceres.
