Do we need a single sheet and a sleep sack?

In summer early fall that should be enough.

Lae fall winter maybe a bag is needed.

You don't need both a sleeping bag/sack and a sheet. You need something (one or the other) to put between your body and the mattress, for hygienic reasons, and most people want something to cover them so they bring either a light weight "liner" or a warmer sleeping bag, depending on the time of year.

Even in December I was in and out of my sleeping bag all night. Got hot, got cold, got hot, got cold. I cant remember any single night where I was rugged up in my sleeping bag all night. Most Albergues had some sort of heating, but it tended to go off after midnight. Even so, I had no real issues, but was glad to have sleeping bag if I needed it. You can sleep in it, or on it, depending on the Albergues and the heating situation, and how close your bunk is to the heating. I do know of one pilgrim who sent his sleeping bag home to the Netherlands at about Pamplona, and he regretted it on quite a few nights after that as we headed into December. He was relying on the Albergues having blankets and that didn't always pan out to keep him warm enough.

I brought a sleeping bag and a liner and it was so hot in September that I basically just used the sleeping bag as a mattress cover. I think next time I will bring a big silk (because it’s lightweight) sheet to cover the mattress and pillow, and a sleeping sack. It might be more than I technically need, but I liked feeling more protected from any bed bugs that might be lurking. I also treated all my bedding with bug spray. Some people brought pillow cases, which I might do depending on how big my sheet is.

I use a double bed sheet, fold it in half and 'slide' in between the 'sheets'. That's it but I do NOT travel in the colder months.
