I wish I had done a short walking day from Pontevedra and stayed in Cambarro for a night. Cambarro is a lovely fishing village, and the way from Cambarro to Armenteira is a very long steep way for a hot afternoon. On the boat day, stretch the stage from Vilanova to Teo, instead of Padrón. The boat trip plus 10km is a good use of a day. Teo is very small but only 13km from Santiago, which means you hit the trail before the many pilgrims walking from Padrón and you'll arrive in Santiago by lunchtime, plenty of time and energy for sightseeing.
Bring a jacket for the boat trip to help you stand the cold wind for 2h! A Buff/bandana for the neck is great too, and I wish I had earplugs (I got a little headache after for the wind on the ear), book the trip in advance, otherwise you may need to wait for the next trip and miss 2h of your day.
Learn some words of Galego (if you don't already) because I was very surprised that English is very little spoken.
