FYI this is on the Voie de Tours or Via Turonensis. You might find something if you do a search for those terms on the forum, there's also a dedicated sub-forum. A quick google search will probably give you some basic info about stages, etc.
 
We went by train from Bordeaux to Dax then caught a bus to St. Palais (on a Saturday one bus only buy ticket at train station. )
A beautiful half day walk from there Ostabat. Next day we walked on to St. Jean Pied de Port.

When I asked the same question a few years ago I was advised a more picturesque option was La Voie de la Nive from Bayonne to SJPdP. I can’t comment on Dax but the other route which we took was gorgeous!
