Taxis and Mochilla service on Via de la Plata

I will be walking from Seville to Salamanca in September/October. My right knee is a challenge. Are there taxis out of most villages should I need to occasionally resort to one?

Also, is backpack (mochilla) transport available like on the Camino Frances?

The taxi and backpack service is available...but much more spotty than the other routes.

There probably is less demand so services are not as developed. I don't recall seeing any one using backpack services on the VdLP.
Probably available for injuries, etc...but I think most walkers tend to be the more experienced types who are more likely to carry their own packs unless physically unable.
 
Ideal sleeping bag liner whether we want to add a thermal plus to our bag, or if we want to use it alone to sleep in shelters or hostels. Thanks to its mummy shape, it adapts perfectly to our body.

You'll find a taxi in any not-too-small town. I wouldn't worry too much about it. Ask locally and they'll tell you what's available. If you think you may make it to the next town but not further and you would like to take a taxi to go further, to ask in the previous town whether there's taxi service on the next town might be a good idea although there's no guarantee that locals in one town will be (fully) aware of what taxi services (if any) are available on neighbouring towns.

One thing that you shouldn't overlook is that sometimes distance between towns is big (e.g.: between Casar de Cáceres and Cañaveral).

In Castilian, it's mochila as you said. OTOH, in Catalan it's motxilla (tx is pronounced like Castilian ch).
