On the Camino France last year I recall seeing a sign that said ""Second bar is always better" A. Schopenhauer". Can anyone remember where that sign was and let me know, please? And does anyone know if Schopenhauer really said that?

The first edition came out in 2003 and has become the go-to-guide for many pilgrims over the years. It is shipping with a Pilgrim Passport (Credential) from the cathedral in Santiago de Compostela.
My rule of thumb is that the second bar is usually shut. Ergo never pass up the chance of a coffee!

I'm also minded of the hospitalero of the Albergue on the left just as you enter the Boadilla del Camino, out in the roadway, assuring passing pilgrims that all the other Albergues in town were cerrado ;)
:) And in one little village I recall, the second tienda wasn't even there.

The sign is just before the village of San Nicolas del Real Camino. And both bars are good! The second bar belongs to Albergue Laganares

I like to spread the wealth a bit, and I hate queuing up for a cup of coffee, so if I can see it or I know it's there a short distance away, and there's a crowd at the first one, I go to the second bar when possible.
 
As we came into this town a lady had driven out about a few hundred metres before the 1st bar and was handing out brochures for her bar... the 2nd bar! It took a few extra minutes to get to it but we both admired her gumption to get out there and make it happen so we were happy to reward her effort!

and occasionally there are places along the Camino where there is a second bar and a third or fourth all in the same area.....
