Ahh yes, stamp collecting, a pilgrim fetish! We included the stamps on our Camino map on our blog as many people wanted to see these as much as the photos. I was a bit disappointed on our last Camino that may Municipal Albergues all now share the same stamp... very utilitarian. But memorable ones came from:

Roncesvalles – Like a bishops ring
Lorgono – not the officuial one in town but from the old lady on the way who won’t let you pass without figs, water and a sello
Astoria – would make a good tattoo
Alcuescar – Architectual
Banos de montemayar – large but features the roman road
Ayvntamiento – like a woodcut
Montamata – Pilgram calling out to join him
St Marta de Tera – Jimmy off the porch
Albergueria – despite the name, no albergue, good stamo and they get you to sign your name on a shell and hang it up in the bar.
Santiago – you’ve got there
Fisterra -you can go no further… unless its Muxia

Best stamps, obscure post offices, if you can't find a bar the post office are usually delighted to be asked, Guardia Seville (though they don't like you asking for directions) and Parador, any one, the stamp's the same but ahh the service!
