I did easyJet to Madrid and then Alsa coach from Terminal 4 (free shuttlebus from Terminal 1, where you will arrive) Journey is about 4.5 hours, with the last hour a spectacular river gorge.
easyJet has up to 5 flights a day from Gatwick, so you should be able to do it in one day. If you can't, and have to overnight at Madrid, I recommend the Hostal Viky.

The first edition came out in 2003 and has become the go-to-guide for many pilgrims over the years. It is shipping with a Pilgrim Passport (Credential) from the cathedral in Santiago de Compostela.
