You can get a stamp almost everywhere, but in Paris you might get some strange looks from places that are not camino related. Many stamps in France are a return address stamp normally used on mail, rather than the custom designed stamps which are more common in Spain.
 
You might get one in Chartres at the cathedral. Possibly Notre Dam. I'd like to kow too as that's where I will be starting. My last Camino began in Dieppe, FR and had I known I could have gotten one there. I also could have gotten one in Bayonne but I didn't get my first stamp until Bordeaux.

While in Paris stop in at the offices of Compostelle 2000, 26 rue de Sevigne located on the right bank in the historic Marais district. They provide information and planning assistance for pilgrims in the Paris region and may be able to provide you with a Crendential.
