I am vegetarian and wasn't that pleased with what Spain had to offer in terms of vegetarian friendly local cusine. Even the indian restaurants we tried in Madrid were horrible. For most part, it was pizza or cheese sandwich or Gazpacho. We had much luck with food in Torremelinos as its more culturally varied. We had awsome middleastern, indian and chinese. Just along the boardwalk there are myraid of ethnic restraurants.

You will find tapas bars throughout Spain where you can get small dishes. Most of them have meat or seafood, but the most ubiquitous tapa is tortilla, which is kind of like a fritatta made with eggs and potatoes. Some tortillas contain meat as well, but almost every tapas bar has the basic version. Other popular tapas include cheese and mushrooms. Needless to say, figure out from a phrase book how to specify exactly what you will and won't eat, and hopefully you will find waiters willing to help you find something.

Hello! Having been to both Spain and and Portugal as a Veggie, I can say rest assured you will find options. I always found something with a little luck and asking around. The other thing you could always do of course, would be to cook your own meals where possible. Lots of places have shops where you can buy pasta, pasta sauce and also you could buy stuff in the evening so you're fully catered for lunchtimes.
