It depends.

There are national regional and local bus lines.

Nationals run same schedule every day.

Regionals often don't run on Sundays.

Locals often run as little as once per week.

So you need to get specific information about the bus routes you intend to travel.

I think that you need the airport bus to Santiago bus station, then the Freire bus line to Lugo and then Monbus to Sarria. The Freire might go to Lugo via the airport so saving you from the trip into town.
Others could maybe confirm this please.
