Greetings! Any recommendations as to where to stay for a couple of nights in Biarritz?

That really would depend on your budget, your season, and what you want on your doorstep.
Biarritz is one of my favourite European cities. It has a slightly faded regency splendour, restaurants with excellent food at every budget (check out the Casino restaurant, accessed from the beachside) and some of the best surf beaches in Europe, in the centre of town and to both north and south.
If you want sea views but not city centre prices, try Bidart - there are a few hotels etc to choose between - which is only a bus ride back to the centre.

My latest fav is Hotel St. James on the corner next to the marche. Petit Hotel is great but gets filled pretty quickly during the season., and that is the problem in Biarritz. The season from June to September is very popular for budget travelers from other places. There are some good AirBnB's but make sure you are close to town and on a bus line.

I stayed in the Windsor Grande Plage for 3 nights before a Camino a couple of years ago.
I'd strongly recommend it but make sure you get a room with a sea view as I remember at breakfast that a couple were bemoaning the fact they had not not booked one of these rooms..
The food is excellent and it is very central to everything of interest in the town.
 
Don't forget you can also stay in Anglet or Bayonne, they are all connected to the same public transport, which is very cheap. I remember a daily ticket was as cheap as 2€ or 2,50€, something like that.

So i found a cheap AirBnb in Anglet to stay, which was like 15mins to walk or 2-3 bus stations from biarritz if you prefer Biarritz at Night.
 
Stayed at Hotel La Saphir in April 2019 smack dab in the middle of the little downtown of Biarritz. Fabulous location in a simple but sweet, family run place. Paid $70US a night and would book it again without hesitation. We walked from there to Bayonne as the first stage of our Camino.
Staying outside the “downtown” can save some money, but I LOVED our location and was able to swim in the little cove in the morning (VERY cold that early in the season)
