travel by bus and train... can I wait till travel day to purchase or will they be sold out Madrid to Pamplona, Pamplona to St Jean, Sarria to Madrid

The exact schedule for Sunday will be different from weekdays. Trains may actually be added so people can return home. Check ALSA.com or renfe.com for the date that interests you.
