Second this. November and December are wonderful months to walk, just keep an eye on the weather. I got snowed in at Foncebadon my first time. But there are plenty of beds, just double check the albergue is open all year.

I also went from peregrino to hospitalera. Both rewarding in different ways. It certainly gives you perspective! If nothing else, it made me a better pilgrim.
I met a few pilgrims who gave up on the coastal route and switched to the frances because they were tired of the bed race (and thunderstorms). This was in July.
