These trails and gravel roads are public and can be used by anyone, any time of the year. If you can handle walking through these hills in winter lies in your own responsibility.

I have not walked that route but been hiking and camping down there in the middle of sweden quite some times.
It can get cold and really windy and the felt temperature is way lower than you would expect. Instead of bringing a tarp, a footprint plus a bivvibag I would rather take a tent. But...
I felt that knowing several languages is of course a big advantage- I can communicate with most people.
The disadvantage: I usually have to talk for my travel partners and organize everything for them. From ordering food to eventual doctors visits.

I'm writing the following without any positive or negative connotation, it's just an observation:
the Camino is a cheap holiday;
hiking is popular and the Caminos are included in many "top 10 of the world" lists or magazines such as National Geographic;
many want to visit Spain and Portugal...

Some people simply enjoy winter.
I like it cold, it's cozy to wear thick clothes and to look forward to a warm evening in front of a fireplace.
I love snow and ice, it's magic and mesmerizing.
Winter is a time of silence to be outdoors, not so many tourists, no stress.
