Never felt the need. My hiking shoes keep my feet dry most time. However, if I have to go through anything more than ankle deep I normally just carry on walking and empty the shoes after crossing. The socks and shoes normally dry out soon enough and it has never caused me any problems.
Plenty, as you cannot walk far if you get dehydrated. I always carry about 5l in my sac and another 3 as spare. In addition, I always take a very large drink of water at the start of the day!

Look for the ever present ‘Chinese’ shops that sell a bit of evrything. They will sell good poles and bit less expensve. The last omnes O bought from such a shop have done more than 4000kms with me.

Have walked more than 2000kms on one pair of laces.
I mostly use a poncho but they can be a nuisance in strong winds so I always carry a rain jacket (and trousers as well). I get my ponchos from the sort of shops in spain that sell farming goods. They cast about 20 euros and seem to be favoured by the people who work on the land.
You most definitely do not need them. However, you may want to use them.
On all of my caminos I have always just carried a single pole (normally strapped to my back pack) for those tricky water crossings and to fend off the odd overly intrusive dog.
It does seem to be the case. I have walked a few caminos and often walk 40km or more a day and very rarely get any blisters at all. It seems my feet are a ‘standard’ size!
