The PW is my local LDP, I completed it 15-18 years ago - it's a fine route. I think you'll be fine wild / stealth camping. Remember: Leave No Trace....but do have fun!
Have a look at Michelin Road Maps 'Regional Espania'. The scale isn't great at 1cm: 4km, but I found them very helpful when trying to look at the bigger picture - especially when doing the Via de La Plata last year.
The Caminos aren't marked, but if you also have a guide book you'll be fine.

I brought poles in my carry-on pack on Ryanair, Manchester to Madrid in April.
No problem getting them INTO Spain but they were confiscated on leaving Spain.
Now back in Spain, with poles - this time they're in hold luggage so no problem.
We had no problem flying out to Madrid with our poles in our packs (carry-on) but on the return flight from Madrid they were confiscated: 'This is not allowed in Spain'.
We had the opportunity to have them sent as hold bacggage but it was Ryanair and their charges would have exceeded the cost of...
I'm sure you'll be more than capable of doing VdLP solo. It's a lovely route and is eminently 'do-able'.
Personally I prefer the less busy / less frantic VdLP to the busier French route.....but that's just me.
You'll almost certainly slot in with walkers of a similar ability to yours.

I strongly recommend using dressing material 'K-Soft K4'. It's available from chemists / pharmacies - although they may have to order it in for you, it's ridiculously cheap!
To use:
Cut a piece sufficiently large to cover the problem area twice-over.
Double the piece over and cover the problem...
