I agree with those who suggested A Coruña - SO much to see but a lot of city walking to get to the really scenic places... or buses... Whatever, enjoy your five days!!
I'd say do it, and maybe use local buses to Muxia and maybe Camariñas. I took a day tour from Santiago that included several stops that I'd definitely go back to visit on a short trip. Buen Camino!
I think the only thing you might be missing is nuanced French, which can be delightful. Personally, I love MMDDs! Alas, I've not used one on a chemin / camino. Just enjoyed the reading and dreaming experiences.

I usually walk in the Fall, but in 2017, I walked from Logroño to Sahagun (but not the meseta) and LOVED to see the wind blowing thru the new, GREEN wheat - maybe about a foot high - not sure - absolutely lovely. I was used to seeing golden wheat, or bare fields...
