from Soto de Luina to SdC it took me me 12 days (+ 1 day off). I was 67 at that time. So I think it is easy doable for a young man (and for a woman either).
According to Gronze the Convento is temporarily closed due to COVID-19. The one that is open is Albergue-CasaRural Inxauaspe, a bit outside of the center.

Just skip the two most anoying stages (Bilbao-Portugalete and Gijon-Aviles). Then you‘ve left 26 only. And I think then it is pretty doable. Yes, the first stages are the most beautyfull, at least in my opinion, but physically quite challenging.
