You might be better off considering starting a bit closer to Santiago, say Logrono or Burgos. Then you can start a little slower, take your time, figure out how long your stages should be..... With a time crunch looming, you guys might feel compelled to walk harder and faster on a daily basis...

Spanish tap/fountain water is just fine. It's not Mexico. I didn't have any stomach problems on either of my Caminos, and never encountered anyone who did.
What about water along the Via de la Plata? I know fountain water is perfectly safe, but I've heard the fountains on the VdlP are fewer and farther between, as are villages/bars. And since the terrain is so open and unshaded, I'm concerned about running low.

If you have the luxury of time, take the 8 weeks! I was a proud little snail on my Camino Frances, taking the full 2 months - enjoying some short days, some sightseeing/rest days, and it gave me time to walk to Finisterre too. Finisterre is my favorite part of the whole Camino.
