I would like to emphasize this. On the Camino, booking can be handy, but it is by far not the best way to find accomodation. For many places, especially the better ones, there is no need for the expensive booking. There is also no need because everyone is passing any albergue or hostel anyway...
In general: yes you can get a stamp.
But at the same time: I am a former albergue owner and I have mixed experience with it. Just know that hospitaleros have very long days in a very long season. I was happy to give a stamp when I would have time or would be in the albergue.

Our albergue albergue Ponte Ferreira is an all vegetarian albergue with also vegan food in the camino Primitivo, 27 kms after Lugo: www.ponteferreira.com.
On the Primitivo at least also albergues El Tulipan in Salas, Bodenaya and Fontenonaya are vegetarian.

On samana santa most of the albergues are open again. It is a feast for Spanish people. Most of them celebrate with big parties in towns, a few will do a camino. My experience is that there is no need to book albergues, as long as you stay in the pilgrimsalbergues. Avoid the bigger places where...

About your calculation: I think it is nearly right, but what happens this year is that there (nearly) were no pilgrims till july. So this year all come in one half a season.
Can you explain in what way exacty it is not crowded at this moment? There are indeed less pilgrims then like 2 years ago, but because of the bed restrictions of 50% there was a very serious shortage of beds. How is your experience in that now?

If you want to avoid the last part of the Frances, there is indeed a camino which goes from O Cobreiro to Lugo on the Primitivo. From there you can go to the Northe, and from there, there is a bypass which brings you back on the camino Frances only at the airport, 15 kms before Santiago.

A sleepingbag is stil required in most albergues, also private ones. You might get (need to pay for) a blanket and sheets, but don count in that.
I do see that more people just go without, they can be a burden to many hospitalero's.
For our albergue on the Primitivo we hardly have any bookings for this year. There is no need to book so much ahead. And except that, most of the early bookings we get, are cancelled anyway....
My advice would be to book your first 1-2 nights. Then you will see how busy it is and you can book...
As an albergue owner (not on the Frances) I can second this. First for yourself to make sure that the albergue in which you are planning to go is open, but also to let the albergue know that at least someone is coming. Albergues might choose to close for the day if there is no reservation for...
In general: people tend to work their week till the end, and travel to- and start their camino during the weekends. So in general, in weekends the numbers are higher from any bigger starting point on the camino.
So tuesday till thursday are about the lowest days, also in SJPdP
As a hospitalero myself I can indeed tell that many albergues are in a deep deep wintersleep at the moment. The season is long and tyring.
Also, there is hardly any albergue which is fully booked for any day this coming season. Beilari in SJPdP en Orrison might be an exeption. So no need to...
