I have travelled by bus from Burgos to Castrojeriz and the bus left Burgos at 17.30 and arrived at Castrojeriz about 6.45pm so plenty of time to walk in daylight back to Hontanas.
As someone else has noted, you are trying to book too early. I have just looked at www.google.com/flights. They have prices Auckland to Madrid return in May and June for $1300 to $1500. Look at the price graph for May and June. They do not have prices for Dec and Jan yet

The ALSA buses to Pamplona stop at Estella. When I was hospitalero during Oct 2015 in Estella there were no albergues providing dinner, but there are few restaurants in the town centre providing meals. Ask the hospitalero at your albergue/hostal for exact locations.
Stephanie, It is almost certain there will be other pilgrims on your flight; just casually look at passenger's feet on the plane or when disembarking and hook up with them. They will probably need reassurance as well as yourself.
