Ultra 3 shoe and boots have gore-tex. Never been an issue for me like other have experiences. 2 of my Camino’s have been in the spring and it’s been helpful with mud and rain. Never need to dry them out as my feet stayed dry. I use moisture wicking socks and change them out mid day usually.

I have very narrow feet and hike with Solomons but use SOLE inserts (that form to your feet with heat.) I have used the brands trail runner, ultra 3 hiking shoes, and now ultra 3-Mids boot. All with great results and rarely get blisters.
The high impact SOLEs are my preference and I buy them...
I use color coded packing sacs as well - some have compression if needed. Like a cinch sac or packing cube but with zips at the top and small carabiners that are really helpful. The system helps me not lose things, and have the benefit above of extra layer of water protection, bed bugs etc...
Going to add my vote for REI here. Research is good but I strongly agree with folks about the fit. All the packs you mentioned are well made - it’s just a matter how they work for you and then small preferences like pocket locations and zips, etc.

I have been traveling with a backpack for over a decade and when I need to check the bag (most often on the return flight) I have used gear ties to secure some of the straps. I carry these ties anyway, so they are handy for checking my bag.

The first pack I purchase was the wrong size frame (measurements were all wrong the first time.) If you go back as @Ahhhs suggests, perhaps they can double check the frame measurements as well.

I found I was adjusting the load lifters too much which caused a big gap with my shoulder straps and my shoulders/back. Once I learned to adjust all the straps in the correct order, this stopped happening and the discomfort did as well.
