Accommodation on the meseta close to Burgos in February

I live in Spain, and I have a bit of time off starting next week. My plan was to head up to Burgos and walk some of the meseta. I briefly went to booking.com, and it looks like there is literally no accommodation for the first few days available. It could be there is accommodation, and they just aren't taking online bookings. But I was just curious if anyone knew for sure what it's like right now near Hontanas and Hornillos del Camino.
 
Get a spanish phone number with Airalo. eSim, so no physical SIM card. Easy to use app to add more funds if needed.
I love that trek from Burgos to Sahagun but normally wait until a little later in the spring. I can not imagine that some of the tried and true places aren't open in Hornillos, Hontanas, Castrojeriz, etc., etc.

I passed through Hornillos and Hontanas about 3 weeks ago. Nothing was open in either village on the day I passed through. No accommodation or bars. After waiting for over a hour for the Hontanas hospitalero to answer my repeated phone calls I carried on to Castrojeriz where there were some options available.

I recently walked the camino. Hornillos municipal was open. Here is a shot of my walk through the Meseta and towns I stopped in. Hope it helps
