My wife and I are heading for Porto from Paris to do the coastal walk in beginning of May 2020. If anyone has tips or suggestions on what to avoid/ what not to miss on the walk around that time of year would be greatly appreciated.
 
Get a spanish phone number with Airalo. eSim, so no physical SIM card. Easy to use app to add more funds if needed.

Something which you may find fascinating in its scope and breadth and very useful, is the Search Engine. It is accessed on the menu bar at the top of the page, on your right.

The amount of information that covers your request is extensive. Just enter a word or phrase related to a subject you want information on, and pages of material will be available to help you accomplish your research.

Of course, if you have a specific question there are a lot of Forum members waiting to help, as you already know from your time browsing around :)
