As you approach Toulouse (which is beautiful!) you have a choice of the official route or the "variante" by the canals. I would recommend the canal route for shade - but I haven't tried the other route. I was also forced to take the canal route because I had booked into La Goutille (private gîte) and then Écluse du Sanglier, which is an old canal office converted to a gîte run by the Friends of the Chemin.
