Cycle route beginning in Madrid.

Hello fellow bicigrinos. I am in search of a pleasant cycling route for approx 3 to 5 days leaving from Madrid and preferably not heading north. I wondered if you guys had and suggestions/ experience?

Would this Camino Ucles do? It's only 144km so maybe you'd go beyond and then back again??
