As I have pointed out above I have never had any problems getting a bed on any camino. However, I should point out that I always got away early in the mornings and consequently I was finishing my day by 2pm at the latest.
I walked in September 2018 and had no problems getting a bed even when the path joined the CF after Melide. I have also walked the CF, the Sanabres and the Portuguese from Lisbon and have never booked ahead.
I walked it in my 80th year. It was certainly more difficult than the CF and Portuguese. Take your time and don't attempt too much.

I have walked both the C2C and Primitivo. The C2C is far more difficult with much climbing over boulders etc.
However, my suggestion is you make time each year to do both. they are both beautiful walks and both very different

I took the Pola route because I could not walk the 36km distance to accommodation on the other way with such a mountainous climb. I was 78 at the time so I knew I could not attempt the Hospitales.
The Pola was a beautiful option and it does join the Hospitales at it highest point.
Three of us walked the Primitivo last September. We never pre-booked and always found accommodation. However, we always started out early and were usually finished walking by 2pm.

Not sure how you will go with long distances every day as most of the path is very mountainous until to get to Lugo.
