When do most of the Hostels open, is this usually after Easter? I was thinking of starting next year (2022) at the beginning of April, but will accommodation be a problem? Thank You

There is no set “season” since some albergues are open year-round while others reopen on specific dates in the Spring (not tied to Easter). With Covid, no one can say what will happen 5-6 months from now. I suggest consulting Gronze.com or similar pilgrim sites to get an idea of planned reopening dates.

I have booked ST JDP for after Easter and intend to do the Valcarlos route. Waiting to see what Covid/ etc have in store before attempting further bookings and due to age and infirmity will probably use Booking.com for rooms. :) Am more interested at the moment in whether accommodation will provide blankets or is it going to be sleeping bag necessary? I carry a lightweight bag anyway but it can get chilly up there at night!

Easter is a very popular time for Spanish people to walk the Caminos and so many albergues are open but they are also often very busy or full.
 
I have started April 14 twice and everything was open. I don’t think you will have any issues as long as it’s April. I don’t remember staying anywhere that said they had just opened.
