There are quite many pools along the Frances. But the nights in May are still cold and if the pools are filled with water they will not be upheated so the water will be COLD!
If you bring bikinis then maybe use them at nights to sleep in with a T.
While in Santiago you might want to walk to Finisterre and get use for your swimwear on the beaches of Galicia.
I always carry swimming trunks. Swim stuff is pretty light weight and I've had chance to use frequently, although that said I haven't walked the Frances.
Unheated pool in May is certainly refreshing but certainly not comfortable :shock:
