Is there somewhere I can buy a duffel in Santiago de Compostela to put my pack in for my flights home? Thanks.
 
Get a spanish phone number with Airalo. eSim, so no physical SIM card. Easy to use app to add more funds if needed.
I found a laundry sack with drawstring in a china store that worked well for my return flight. And it was only about 2 euros.

It is on the right side as you are heading away from Rua de Montero Rios... It is split into two shops in a “V” shape.

My personal favorite, albeit smaller, is on Rua de Montero Rios, directly opposite the Carrefour market.
