When crossing from France to Spain do you get a stamp on your passport? Do you have to go through customs?

With a Schengen visa, you may enter one country and travel freely throughout the Schengen zone. Internal border controls have disappeared; there are no or few stops and checks. This means that internal air, road and train travel are handled as domestic trips, similar to travel from one US state to another. Those who traveled in Europe before Schengen know the difference.

Here's the border crossing on the Route Napoleon between SJPP and Roncesvalles. The customs inspectors must have been on a break when we passed through :D

There is no customs while traveling between the European Union countries.
Probably the old customs buildings still exist at most crossings but they are no longer used for border control.
 
The one from Galicia (the round) and the one from Castilla & Leon. Individually numbered and made by the same people that make the ones you see on your walk.

Only true for the Schengen Treaty countries. That still leaves a number of European Union countries operating full border controls.
