Prelude: I tried to search the forums for input on On shoes but "on" is a word that's used pretty often so ... it didn't work.

Has anyone tested these out as potential Camino shoes?

No, but when I did the CF last October there was this 80 year old Japanese guy wearing On Cloud trainers. Not sure what model, but he was rapid!
 
I walked the Camino Frances a few years ago with On Cloudventure Waterproof shoes. Very comfortable on trails and on pavement. Didn't have any foot problems, except for occasional blisters on one toe. Only problem was that the waterproof membrane didn't last the whole Camino, and towards the end I noticed some water ingress at the toes. I replaced the Camino Cloudventures with an identical pair, and they're my favorite lightweight hiking shoe today, even for rocky terrain in the mountains.

Hi there! I’ve actually just purchased these for my Camino this summer! I’m currently training in the On Cloudventure and really like them. I’ve tested other popular brands (Hoka Speedgoat 4, Altra Lonepeak 2.5, Saucony Peregrine 12) but my body feels the best after training in the On Cloudventures (less muscle soreness and back pain) and my knee doesn’t hurt when I wear them like in the Hokas. I think it’s because the ankle support is stiffer in than the other shoes and my foot is better aligned in these. My Cloudventures are a bit snug so I am buying the Cloud Ultra in a full size bigger than my normal shoe size. Have you bought yours yet?

Did not work for me, try Hoka or Altra. They cost about the same.

Have tried both -- Hoka's toebed is too narrow for me after a day of walking, and I didn't like Altra's lack of a drop. Right now I'm walking with Topos and am pretty happy with them, but again, was intrigued by what I've been reading about On.
