Itinerary for mid-Aug '24 (from Lisbon) starting to come together, but looking for a rest day recommendation in the vicinity of Baiona, Vigo, Redondela or Pontevedra. For those that have walked through these towns/cities - any particular one I should be aiming for? Cheers!

In the area mentioned, I would make Pontevedra my first choice and Baiona the second. Both have things to do on a rest day. Pontevedra has a scenic old town with an interesting link to the Camino in the Santuario de la Vergin Peregrina, an 18th century Baroque chapel built in the shape of a scallop shell. The high altar features a statue of the Divina Peregrina (Divine Pilgrim), the virgin saint who guided pilgrims to Santiago. Baiona has a scenic waterfront area with a replica of Columbus' ship the Pinta you can visit.

For a great rest day consider taking the ferry to the Cies Islands National Park which is accessible by ferry from Baiona or Vigo. We took a special rest day in Vigo to see them and they are beautiful and worth seeing. The number of visitors are limited so you need to get reservations both to visit the islands and take the ferry.
 
Get a spanish phone number with Airalo. eSim, so no physical SIM card. Easy to use app to add more funds if needed.
Biona and then Ponevedra are both worth stopping in for very different reasons and the Cies Islands are a definite trip to make.
 
Vigo and Pontevedra are big cities. Lots to do and see. And plenty of restaurants in both. Walked thru both this past May.
 
If you love the beach they don't get better than the Praia America in Baiona! And did I mention the castle there too?? ☺️
