Tarta de Santiago en México?

Well, we took a two week break in from the Colorado winter, in the Yucatán Peninsula in February We went to a grocery store in Playa del Carmen, a brand-spanking-new Chedraui in the heart of the tourist area. And what to my wandering eyes should appear?? Indeed! Tarta de Santiago! Fortunately, they had a smaller version, from what you see in this photo, which we, of course, had to try. And it was as good as any Tarta de Santiago I have ever had in Spain. I was remiss, and didn't ask who the baker was. For any of you who are regular travelers to México, like we are, keep an eye out! Could this be a new movement, like pizza?? I hope so!

I've had difficulty finding almond flour in Mexico. Your good fortune!
If you can find almonds, and you have a cheap electric coffee grinder, the horizontal blade type, you have almond flour. Grind it in short bursts until you have the desired texture. It doesn't take long to grind 250 g.

I thought the same thing. All the ones I found have lemon zest, some have almond extract, but indeed, the main ingredients are three: eggs, almonds and sugar.

Mine had nothing for crust (just line bottom of the pan with parchment paper and grease\butter the sides of it) and eggs, almond flour, sugar & lemon zest - reckon one can say 4 :)

with that I have a question - how high does it come out on the average? Mine is probably no more than 1" and Im not too sure that is correct....
 
Depends on your pan size but avg 2-3 cm I recon. The recipe I followed was from Dee Nolan "A Food lovers Pilgrimage along the Camino to Santiago De Compostela". A terrific book beautifully photographed with great recipies.
