There are 2 or 3 companies offering the Finisterre day trip. They tend to hand out flyers near the cathedral. Also the Tourist Information Office in Santiago has details.I am also curious about this. I am not interested in renting a car. Also I just checked by the way tours And all they seem to be offering is package tours for portions of various Caminos. Not day trips
We were exploring the car rental option but since the pandemic started and resulted in car shortage, it's no longer worth renting one. The price quoted was exorbitant ($300+/day from Sixt for example). Thus, we're looking for recommendation for tour providers.
