Looking for recommendations as to whether to take the train from Paris to SJPP or fly to Biarritz first. Also, how steep are the downhills? Bad knee.

To me, the choice of a train or a flight from Paris totally depends on timing. The goal is to get to Bayonne or Biarritz in time for an SJPP train that arrives early enough in the day to enjoy the town and get settled for your overnight.

Downhills can be quite steep. In the case of SJPP to Roncesvalles it's a multi-km downhill on pavement or gravel. In the case of Foncebadon to Molinaseca and O Cebreiro to Triacastela they're day-long walks on uneven dirt and rock pathways. Probably the hardest days of walking on the CF. I agree that walking poles or at least a walking stick will be a big help with your bad knee. Buen camino!
