Does anyone know any company forwarding luggage from Pontevedra to Santiago via Variante Spiritual?

Yes there are several. I used one last October to take my backpack to the monastery in the mountains and carried myself afterwards. The albergues in Pontevedra will help you.
Just ask when you get there or one of the regular services. You can take your backpack on the boat to Padrón.
