Which sections of the Camino del Norte would you recommend?

Camino Francis (2012), Camino del Norte (2016)
We have about 21 hiking days and will be walking on the Camino del Norte. Any recommendations for the best section(s) to walk? We don't mind walking uphill. We love nature and seeing historical sites. We would rather avoid big stretches walking on roads with cars. We are thinking about starting in San Sebastian, maybe bussing through a few stages as we will not be able to complete all of them. We would like to end in Santiago. We have completed the Camino Frances, so another Compostela is not that important to us, although could we receive another?

Avoid roads & traffic: The stage between Gijón and Avilés is horrible: not the middle part, but leaving and entering. Worst experience of any Camino. I would skip that.

Have you already left? Did you start in San Sebastián? Irún is a great starting point and the first stage is wonderful, if you like walking uphill (be careful what you wish fooor...) and love nature! :O)

Guides that will let you complete the journey your way.
Hands down start in Irun and keep going west, perhaps even turning on the Primitivo depending on how you are doing on time.
