My wife and I have completed four Caminos and we are 100% vegan. We are on the Camino Le Puy right now actually. 80% of the time we eat in the room. We buy our own veggies and noodles and such and we have a collapsible kettle. For lunch on the road, Heinz beans in a can with bread and fruits...

My wife and I are total vegans. Doing our 4th Camino this summer. We carry our picnic lunches with us daily (that we buy the night before) which is usually can beans (we eat it cold, it's tasty!!), baguette, dates, fruits, etc.. easy easy! For dinners, if no vegan restaurants...we consider...
If you stay in El Pito along the way, after you rested up head out in the evening for a 45 min walk down to Cudillero...it is off the trail and we found it by accident. It's a cool, tourist little place on the ocean...several restaurants...go have dinner there and breathe in the ocean air.
My first Camino in 2016, I wored Merrel shoe hikers...resulted in major problems for my feet. For the next two Caminos, I wore plain running shoes. Best decision ever. Comfortable the whole way through. Oh, and for socks, we love the Wright "blister free" socks...they are two ply but very thin...
Rapid or regular...both are PCR and ok for Canada. Because we were overnighting in Barcelona, we took the regular one -- 6 hours later we had an email showing negative :). The regular one is cheaper, I think we paid about $70 each.
We flew from Santiago to Barcelona last week...one hour after landing in Barcelona, we had pre-booked our PCR test in the airport at "Eurofins" (check their website); I believe there is one at Santiago also. Or, prebook something inside Paris airport. The rapid PCR test is ready in an hour or...
