I wear a Deuter AC Lite 21L SL for my day hikes. It holds all my needs, rain gear, extra pair of socks, jacket if not wearing, small first aide/ foot kit, food and water. I also wear a 2L waist pack. I hope this helps you decide. I walked this...
The part of the walk i least enjoyed was Sarria To Santiago. You have more than enough time to do the entire walk. Why not postpone your decision and see how well the walk progresses and then decide to skip some portions (if you need to).
But that leaves you with less than 22 k per day which is maybe less stressful than you think as you might develop hikers legs along the way. But that was not your question, I know :)
I personally would never cut any part from the middle as it...

To me the cathedral is important so if I was on your route I...

Hello Orla,
I had this delima in October. I’m sure you have looked at the kilometers (km are approximate) Ferrol to Santiago 113km, Santiago to Fisterre 89km, Fisterre to Muxia 29km a total of 225 km. You can always walk to Fisterre or Muxia...
