I walked Camino da Costa in April 2019 never booked ahead and never had a problem. That included Holy Week and I was in Vigo on Easter Sunday. I am not sure if this will help for August 2024 so I hope it helps you.

I would suggest staying in Madrid overnight. There is a train from Chamartin Station to Sarria daily at 13.15 and it takes a little over 4 hours. To return from SDC to Madrid there are several high speed trains every day. From memory that journey is around 3 hours.
