You said it "Just freaking out" Why take a backpack you dont want to carry ? I met loada people paying 5Euro a day to send their bags on x 30days =€150 cost not to carry your own things. you can buy sleep bag/ shorts or whatever along way less than that!! Sleeping bag

Renting bikes on some days?
No- walk take a break or take the bus or a taxi cyclists told me its a different experience on a bike as often they take the road not the walking track. Pre-book or risk it?
Id book a bus to Madrid economic way to travel you can book in advance see a bit more of Spain check the timetables etc and book one that gets you in time for your longhaul flight home.....if you need to leave Santi earlier cost of coach cheaper to sacrifice or hire a car for few days or just...- Wildandfree69

Train from biarritz to SJPP
I have just arrived in SJPdP having not booked transport taxi whatever it is called this leaves half hr after the flight got in 17.30.
