We'll be flying out of Vancouver, western Canada.

Is it easier to fly into Paris then train it down to SJPP or fly into Madrid or Barcelona and train/buse to Pamplona to SJPP ??

Its probably easier to fly to Paris but its harder to get back there for the return flight - unless you have an 'open-jaw' ticket.
If you fly on Iberia you can fly to Madrid and Pamplona and home from Santiago (via Madrid).

I always buy a multi-city ticket. I have usually flown in to Paris and than out from somewhere in Spain. Although this last camino I flew into Madrid, then went to San Sebastian. From there, I went by train to St Jean..very easy but with more train changes than from Paris.

Just beware of hotel prices in Barna, Madrid, or Paris. They're at least twice what you'd pay on the Camino. If you can connect flights without having to stay overnight your wallet will appreciate it. Buen Camino!

The plan for us is to head to Madrid for 2 nights then carry on south and spent 2 weeks tooting around southern Spain ,
Valencia, Barcelona , Cartagena then fly home

Valencia is a nice city. I went to university there (although nobody would recognise me there as I was always in the pub). The Plaza de la Virgen near the cathedral is a lovely place to sit and watch the world go by. Buen Camino!

And in Valencia, don't forget to visit the Holy Grail.

"During the Muslim invasion in 713 AD the chalice was hidden in the Pyrenees region after having been in Yebra, Siresa, Santa María de Sasabe (today San Adrián), Bailio and finally in the monastery of San Juan de la Peña (Huesca), where a document (1071) refers to a precious chalice made of stone.
The relic was handed over in 1399 to the King of Aragon, Martin “The Human” who kept it in the Aljaferia Royal Palace of Saragossa and then in the Royal Palace of Barcelona in 1410 when he died. The Holy Chalice is mentioned in the inventory of his properties.
Towards 1424, the second successor of Martín, King Alfonso the Magnanimous handed over the royal reliquary to the Valencia Palace.
